You can find quite a few nice tutorials on www.3dtotal.com (http://www.3dtotal.com)

A personal favorite of mine is the "Joan of Arc" tutorial (in the Complete Projects section of the tutorials). Not exactly for beginners, but it does a great job of showing step by step creation of the entire model.

As Randall posted, www.poopinmymouth.com (http://www.poopinmymouth.com/tutorial/tutorial.htm) has some amazing tutorials as well. Those were all put together by the very talented Ben Mathis.

A personal favorite of mine is the "Joan of Arc" tutorial (in the Complete Projects section of the tutorials). Not exactly for beginners, but it does a great job of showing step by step creation of the entire model.

Y'know, provided he has a basic grasp of the tools, the modeling portion is very beginner friendly. The rigging & texturing portion is something else though.

To be honest, the topological layout of Joan is so basic and rigid that it's probably the most newbie sensible tutorial around. It's really just a lot of extrusions and vertex tweaks. Most experienced character modelers wouldn't lay out edges and polys like that for anything other than a sculptable base mesh. (One that would be retopologized later anyway.) That, imo, is where the Joan or Arc tutorial has become most dated.

BTW, marchris, character creation is generally considered an advanced topic. While it is not impossible for a total newbie to make characters, a background in non-character CG will generally make your task easier. There's a lot to creating convincing characters. If you want to create characters... Cool. Just take it slowly.
