I'm not very good at this either, but when I started out I was directed to this tutorial, it's one way of doing it at least. Helped me in the right direction.

Do a search and you'll probably find tons of other tutorials.

I think you might benefit from starting at even lower poly.

Try going off of solid reference material. Look at some of the art created in some of the mini-comps.

Polycount has a really cool thread called 128:

128 polygons with 128x128 texture sheet

You'll see how they master forms, and economize their polycounts.

I also recommend learning to draw traditionally. Many people attempt to learn 3D modeling with zero artistic understanding of form and proportion, and the results are very often somewhat off, just as you say.

Draw and model from references; these practices in conjunction should train your eye to better notice what doesn't look right, and you will be better able to create what images you have in mind.
